Hida Takayama is a place where high-quality Soba buckwheat seeds are produced because it is located in the cold upland region where there is a large difference between morning and evening temperature.
New Soba noodles (shin-soba) are made using freshly harvested buckwheat. In Hida City, Soba buckwheat is harvested around October, and "New Soba Festival of Hida" takes place each year in mid-October. You can enjoy seeing new style of cooking soba noodle, experiencing soba noodle making, watching masters make soba noodle, and tasting noodle just handmade of newly-ground soba flour with just-fried topping.Eating fresh soba noodle outside is something special!
Not only soba noodel, you can also have various Hida local specialty.
