Born in the city of Fukuoka, this ramen features pork-bone broth and ultra-thin noodles. The broth is rich and milky from gelatine melting out of long-simmered bones. The noodle are white and thin, and you can choose a various degrees of hardness of the noodles as you place an order. An additional serving of noodles can be ordered.
The toppings are mostly simple with leek and pork loin only. Other options include kikurage (wood ear mushroom), bean sprouts, bamboo shoots, boiled eggs and laver. In most cases, you can freely add white pepper, red pickled ginger and leaf mustard available on the table. You can find it all over the city, but check out two nation-wide chains originated from this city - Ippudo and Ichiran.
